Homemade Potato Fries

We make these on New Year Day every year.    You can make as many as you can.  I have not tried to bake them as of yet but I am going to try too soon.  My kids love these and at times will ask for them to be made.  We have a small deep fryer so we use that, but you can use a pan with hot oil.  You might have to add oil as you cook them.

We use one large potato per person if you want to do more you can.   Peel the potatoes first, when you are done with peeling them I place them in water so they don’t turn brown.  After all of them are peeled cut them in half long way. Then cut them into wedges and place back into the water until you are ready to fry them up.

After the oil is hot enough take some of the potatoes out and dry them off. After they are dry enough place them into the hot oil.  Be careful when you place the potatoes in the oil they will splatter a bit.  When you are waiting for them to brown make sure you have a bowl next to you.  The first batch will take longer to brown.  After you take the potatoes out put them into the bowl and add some salt and mix.  You will repeat this till you are done.

Kids & Sharing

We tell our kids to share and that sharing is caring.  I don’t want them to share when they are sick.  My daughter was sick with a bad cough when she was on holiday break.  She started back at school on Jan. 9th and that is when I started to get sick.  I told her once that she got me sick.  Her answer was sharing is caring and all I could do is laugh.   I have always told her to share because she has a younger brother that she doesn’t like sharing toys with.   Both of them don’t like to share anything.  Why don’t kids like to share at all?  My son who is 3 years old at times wants something his sister has and will say sharing is caring.  His sister will laugh and then she will sometime give up and share with him.  They are funny when it comes to sharing.

Caprese Bites

Do you know what you are going to make for your party?  I made these for my daughter’s 2nd birthday party and I have people still asking me how to make them.  You can make these in a lot of different ways.  This time I did two tomatoes and two mozzarella cheese balls.  You can add to it and make it any way you want.

Mini Caprese Bites

Ingredients:

  • Cherry Tomatoes
  • Mozzarella Cheese
  • Extra virgin olive oil
  • Basil
  • Balsamic Glaze or balsamic vinegar
  • salt
  • Skewers

Direction:

  1. First take a skewer and start assembling. Tomato, mozzarella, tomato and mozzarella.
  2. Place finish product on a plate.
  3. Next drizzle some olive oil, balsamic vinegar and salt over the tomatoes and mozzarella.
  4. Cut the basil into small pieces. Sprinkle the basil over the caprese bites.

Now you can make a balsamic glaze, add one cup of balsamic vinegar to a sauce pan over medium heat. Once it comes to a boil, set on simmer for about 10-15 minutes until it reduces to a syrup consistency. You can check by dipping a spoon in the balsamic and if it covers the back of it, it’s done. As it cools, it will thicken a bit more then drizzle on top of caprese salad skewers.

Goat Cheese & Tomato Sauce

My mom and I love goat cheese.

 

Ingredients:

  • Goat cheese log
  • 1 jar of your favorite tomato sauce
  • 2 French bread
  • 1 oven safe dish
  • Butter

 

Direction:

  1. Cut the French bread into slices. Set aside and melt the butter.
  2. Brush the melted butter on the sliced French bread.
  3. Next place buttered bread on cookie sheet place in the oven that is heated to 375. Toast bread till browned. Once is done let the bread cooled down.
  4. Grab your oven safe dish. Place some of the tomato sauce on the bottom of the pan.
  5. Next place the goat cheese log onto the dish and add more tomato sauce.
  6. Finally place in the oven. Cook the cheese and tomato sauce till it is hot and toasty.

Lime Chicken

My daughter loves chicken but she always has too have ranch on the chicken.  I think I should buy some stock on Hidden Valley lol. So, I have been trying new recipes for chicken for her and my son.  My mom found this recipe; I am not sure what the recipe is called but we call it Lime Chicken.  The first time we tried it she still wanted ranch with it.  We tried the recipe again a few weeks later and she ate it without any ranch.

 

Ingredients:

  • 3 chicken breast cut into half and beaten
  • 2 tablespoon lime juice
  • ¼ cup shallots
  • 1 cup onion
  • 1 tablespoon butter
  • ½ cup heavy cream
  • 1 cup of chicken broth
  • ¼ tsp salt

Direction:

  1. Brown chicken once chicken is brown then place in a bowl
  2. Next take the chopped onions and the shallots; place them in the pan and brown them. At this point I put the butter and salt in with the onions.
  3. After the onions are browned add in lime juice and the cilantro cook for about 5 minutes to blend all the flavors together.
  4. Next add in the chicken broth and the heavy cream and stir until everything is blended together.
  5. After everything is blended add the chicken you placed on the side. Let simmer for about 30 minutes or until the sauce thickens up. Flip the chicken a few times so the sauce can coat the chicken.

 

Serve over rice and enjoy.

BLT Bite

Now, I made this appetizer for my daughters’ birthday one time and my guest loved them.  I ran out of them and people wanted more.  They are not hard to make but they do take a long time to make.  When I made it this time I had to hide the tomatoes because of my kids.  They love to eat tomatoes with salt or just plain.  If you like bacon you will love these too.

Ingredients:

  • 1 package cherry tomatoes
  • ½ lb bacon (cooked & crumbled)
  • ¼ cup mayonnaise
  • ¼ cup lettuce (chopped very small)

Direction:

  1. Cook the bacon and crumble into pieces after it is cooled down.
  2. Next cut the top of the cherry tomatoes. After the tops are cut off you will need scoop out the inside and drain upside-down on a paper towel.
  3. In a small combine all the other ingredients together.
  4. Spoon the mixture into the tomatoes. This step can be messes.
  5. Place on a plate. Chill in the fridge for a bit and then serve.

 

Now when I cook the bacon I cut the bacon in half and then into pieces.  I don’t cook the bacon whole.  I think it take longer to cook the bacon whole.  You can add as much bacon as you want.  My family loves bacon so I put a lot in this batch.  You can also use grape tomatoes but you will have to cut the bottom of the tomatoes so they can stand up.

Pinwheels

These were the all the rage in the 80’s. They were served at every party. These can be made with all sorts of ingredients, like ham, turkey, and salmon, anything goes with the filling. You can just put cheeses in them. When family and friends had parties, it was also a big thing to make them and bring them along. Children and adults all loved them because they were easy to make and a finger food.  You can use any flavor tortilla, spinach, jalapeno cheddar or plain are just a few to be name. Be creative and have fun with it.

 

Ingredients:

  • Any kind of tortilla
  • 1 package of cream cheese
  • ¼ teaspoon of smoked paprika
  • Tomatoes
  • Lettuce
  • Lunch meat
  • Cheese

 

Direction:

  1. Mix the softened cream cheese with paprika.
  2. Lay out one tortilla wrap and spread the cream cheese mix.
  3. Lay out the tomatoes, lettuce and lunch meat on top.
  4. Now start from one side and roll into a roll nice and tight. You can use as much lunch meat as you want to use.
  5. Cut the roll into ½ inch pieces. Place them on a plate or tray and you are ready to serve.

 

You are done, easy right? Make as many as you want or need.

Chicken Tarragon

My mom made this dish for my brother and I when we were kids.  We loved it.  We would eat all of it or if we had left overs they did not stay as left-overs for long.

It is not a hard recipe to do and you will love it.

Ingredients:

  • 2 lbs chicken
  • 1 cup of scallions
  • 3 cups mushroom
  • ½ cup corn starch
  • ¼ cup of olive oil
  • 1 cup of white rice
  • 1 cup of chicken broth
  • 3 tomatoes

 

Direction:

  1. Cut the 2 lbs of chicken into chunks and place in a bowl with the corn starch.
  2. Mix the corn starch and the chicken chunks together and make sure all the chicken is covered.
  3. Once all the chicken pieces are covered with the corn starch place the chicken into a pan with the oil.
  4. Brown the chicken. As you are browning the chicken get 2 cups of water boiling.
  5. Once the water is boiling put in 1 cup of rice.
  6. When all the chicken is browned place in a bowl. With the left-over oil place the cut mushrooms and half of the scallions in the pan and cook for 2 minutes stirring.
  7. Add the chicken back into the pan with the mushrooms and the scallions. Add 1 cup of chicken broth and ¾ of cherry wine.  The cherry wine is optional.  It tastes good with or without it. If you do leave it off add ¾ of broth in.
  8. Cover and cook for 10 minutes. Stir in ½ teaspoon of thyme and 1 teaspoon of tarragon.
  9. Cut the 3 tomatoes in half and then into 8 slices and add into the pan. Cook for another 2 minutes.
  1. If there is too much water add some corn starch to a little cold water mix together. Add the mixture in a few places and cook for another 2 mins.

Serve over rice and enjoy.

Pokémon Go

img_3097-cropI am not sure how big Pokémon is in your house but in my house, it is everything!  Since Pokémon Go came out in the summer my daughter has been in love with the game.   This was my fault, but I got Netflix and they have two movies and some of the season of Pokémon on it.  I think my whole family has been forced to watch the movie and show maybe 10 times each.  I just don’t think I can take it anymore!  I will for my kids because they love it.

My daughter is 6 years old and my son is 3 years old. You would think that my son would not like Pokémon to the point that his sister loves it, but he does.  For Christmas both kids received Pokémon cards that they both loved.  Both kids received a Pokémon stuff animal. My daughter received a Pikachu and Charmander and on top of that they both received hats to match.

My daughter received an I-pod touch so she can play the game Pokémon Go.  Since she received the gift I can’t get her off the I-pod.  The only problem that I have is that she can only play the games in the house or where she can get fee WiFi.  Thanks to my mom’s new car, she can play the game on the road. My daughter asks almost every day to go for a ride.

As I was writing this post my kids are watching Pokémon. When will this end? Or will it end?

No-bake Cheese Cake

I don’t remember a time that my mom’s no-bake cheese cake was not on the table.  She has always made it in a pan like a cake.

 

Ingredients:

  • 3 8-oz cream cheese
  • 1 package lemon jell-o
  • 1 cup hot water
  • 3 envelopes of dream whip
  • 3 Tbls sugar
  • 1 box ready graham crackers

 

Direction:

  1. Dissolve jell-o in hot water, chill till almost ready to be set.
  2. Follow the instruction on the box for the graham cracker pie crust.  Place that in the pan you are going to use.
  3. Mix together dream whip package, cream cheese, with sugar until light and fluffy.
  4. After the jell-o is almost set fold it in the cream cheese and dream whip mix.
  5. Place the mixture on to the pan with the graham cracker and place in the fridge for two hours for it to set.
  6. Once the two hours are up cut into pieces and then enjoy.

 

Now this year we did this recipe a different way.  Instead of putting the cheese cake in one pan we made mini cheese cakes.  We use the mini cupcake liners and filled the bottoms with a ¼ tsp of the graham cracker to the cupcake liners.  After they were all filled I took a top to a plastic bottle and pressed them down.  Then I filled a bag with the cheese cake filling and filled each one.  I sprinkled green sugar on top of each one.  I let them set for 2 hours and they were ready to eat.  I had to keep my kids from going into the fridge to steal one.
