Lime Chicken

My daughter loves chicken but she always has too have ranch on the chicken.  I think I should buy some stock on Hidden Valley lol. So, I have been trying new recipes for chicken for her and my son.  My mom found this recipe; I am not sure what the recipe is called but we call it Lime Chicken.  The first time we tried it she still wanted ranch with it.  We tried the recipe again a few weeks later and she ate it without any ranch.

 

Ingredients:

  • 3 chicken breast cut into half and beaten
  • 2 tablespoon lime juice
  • ¼ cup shallots
  • 1 cup onion
  • 1 tablespoon butter
  • ½ cup heavy cream
  • 1 cup of chicken broth
  • ¼ tsp salt

Direction:

  1. Brown chicken once chicken is brown then place in a bowl
  2. Next take the chopped onions and the shallots; place them in the pan and brown them. At this point I put the butter and salt in with the onions.
  3. After the onions are browned add in lime juice and the cilantro cook for about 5 minutes to blend all the flavors together.
  4. Next add in the chicken broth and the heavy cream and stir until everything is blended together.
  5. After everything is blended add the chicken you placed on the side. Let simmer for about 30 minutes or until the sauce thickens up. Flip the chicken a few times so the sauce can coat the chicken.

 

Serve over rice and enjoy.
