My daughter loves chicken but she always has too have ranch on the chicken. I think I should buy some stock on Hidden Valley lol. So, I have been trying new recipes for chicken for her and my son. My mom found this recipe; I am not sure what the recipe is called but we call it Lime Chicken. The first time we tried it she still wanted ranch with it. We tried the recipe again a few weeks later and she ate it without any ranch.
Ingredients:
- 3 chicken breast cut into half and beaten
- 2 tablespoon lime juice
- ¼ cup shallots
- 1 cup onion
- 1 tablespoon butter
- ½ cup heavy cream
- 1 cup of chicken broth
- ¼ tsp salt
Direction:
- Brown chicken once chicken is brown then place in a bowl
- Next take the chopped onions and the shallots; place them in the pan and brown them. At this point I put the butter and salt in with the onions.
- After the onions are browned add in lime juice and the cilantro cook for about 5 minutes to blend all the flavors together.
- Next add in the chicken broth and the heavy cream and stir until everything is blended together.
- After everything is blended add the chicken you placed on the side. Let simmer for about 30 minutes or until the sauce thickens up. Flip the chicken a few times so the sauce can coat the chicken.
Serve over rice and enjoy.
